法國五月美食節回來了!美食節期間不僅要「入鄉隨俗」食法餐,更要法式慢活過週末!法國傳統市集是法國生活藝術的精粹,法國五月美食節將於 4 29 日至 5 1 日在赤柱廣場美利樓地下舉辦第四屆法國傳統市集,集美酒、佳餚、雜貨於一地,帶大家突破地域限制,度過一個難忘的法式週末。

第九屆法國五月美食節 (Le French GourMay) 由法國商務投資署 (Business France) 香港辦事處主辦及銀聯卡贊助。適逢法國五月藝術節 (Le French May) 25週年,美食節為香港及澳門隆重呈獻法國香檳區美酒,慶祝四分一世紀的中法文化藝術交流!

今年五月,超過220家香港及澳門合作夥伴,包括米芝蓮星級大廚和餐廳、食品及葡萄酒進口和零售商、以及品酒學院,將精心設計一系列特色菜單,或舉辦精彩的香檳品酒會、推廣活動和工作坊,誠邀各位參與法國五月香檳慶典。公眾可在五月於香港舉行的週末歡慶節目中,盡享香檳美酒及法式風情。

  • 美食節主題大區香檳區

 

    • 香檳區位於首都巴黎以東150公里,古羅馬人自中世紀已在這種植葡萄,令香檳區成為歷史悠久,土壤肥沃的釀酒區。香檳酒是一種汽酒,但並非所有汽酒都可稱為「香檳」,唯有香檳大區出產的才可專稱「香檳」。大區內四個主要種植區:蘭斯山(Montagne de Reims)、馬恩河谷(Vallée de la Marne)、白丘(Côte des Blancs)及巴爾山坡(Côte des Bar)廣納多達 278000 個葡萄園。大區共有 15000 位釀酒師,主要種植三種葡萄:黑皮諾(38%)、莫尼耶皮諾(32%)和霞多麗(30%)。
    • 香檳酒常說「開香檳慶祝」,不僅因為開香檳時「噗」一聲的熱鬧,更因為香檳芳醇千姿百態。香檳地區內眾多葡萄園與釀酒師各有獨特風格、秘方,釀製出萬千美酒。無論場合、口味喜好,總能找到完美的香檳作配合。香檳區受大陸性氣候和海洋性氣候影響,降雨量維持適中水準,有利種植高品質的葡萄。石灰岩土壤有利排水,並令香檳酒帶有獨特的礦物香。不同釀酒師的風格令每一個酒莊出產的香檳酒都與別不同。比如釀酒師會用木酒桶進行發酵,令酒吸收木材散發的橡樹香、雲尼拿香、甚至產生暖暖的烘香。酒亦會透過木材微細的氣孔接觸氧分,令果香更酥軟。其他釀酒師則選用不銹鋼製的酒桶,保存酒的新鮮度、柑橘果香和礦物香。
  • 香氣萬千

香檳酒的香氣隨葡萄的種類和酒齡等因素變化,無年份(NV)香檳酒須於酒窖內儲存至少15個月,年份(Vintage)香檳酒則至少存放3年。年輕香檳清脆活潑,帶柑橘類果香、花香及礦物香;成熟香檳香氣較廣,散發果脯、糕點甜味,甚至香料和植物香;古董香檳則華麗豐富,透出濃濃的蜜餞、蜂蜜、烤麵包的香味。

  • 「香檳」的尊稱 

 

    • 香檳受法國及歐盟、乃至全球120個國家法律保護,訂明只有在香檳區生產的葡萄酒才可以被稱為「香檳」。早於1927年規定產區,並於1936年正式使用「香檳」原產地監控命名(AOC)。香檳生產受嚴格規定,規則涵蓋葡萄種植以至葡萄酒的標籤。 目前香檳區有擁有319個小產區(村莊)。
  • 金樽清酒 玉盤珍饈香檳與美食的配搭相信香檳是任何場合,餐桌上任何一道菜式搭配的首選!年輕的霞多麗香檳是完美的開胃酒,宜配搭新鮮的開胃菜,如輕熏魚、貝類、蔬菜天婦羅和酥皮點心。黑葡萄年份香檳則宜配鵝肝、熏雞和烤羊架等有多層味覺享受的主菜。如奉果味甜點或水果餡餅,配搭成熟香檳可豐富果香口感。

 

  • 香檳區旅遊自18世紀起保留下來的香檳區山坡、房屋和酒窖及悠久的釀酒傳統在2015年被列入聯合國教科文組織世界遺產。香檳區是葡萄酒旅遊的著名地點,葡萄園、酒窖和合作社等每年組織不少葡萄酒之旅和品酒活動,歡迎遊客參觀,並購買特別訂購的香檳酒。每年1月22日,香檳區亦會慶祝聖文森(釀酒師的守護者)節,場面盛大。

Winery Backgrounds:

Hentley Farm
Set on the red-brown soils of the western Barossa Valley, Hentley Farm founders Keith and Alison Hentschke acquired the 150 acre vineyard and mixed farming property in the 1990s. Following extensive research to find out where the best red wine grapes in the Barossa Valley were being produced, their studies led them towards the rich red soils of the Seppeltsfield area. Keith used an old soil map from the 1950s to strategically locate the best parcels of land and after a number of years acquired Hentley Farm. With a focus on perfecting the vineyards, the first wines weren’t released from the property until 2002. The estate was extended with the purchase of the neighboring high quality Clos Otto block in 2004.

Oliver’s Taranga
William and Elizabeth Oliver arrived from Scotland in 1839 to settle at McLaren Vale. Six generations later, members of the family are still living on the Whitehill and Taranga farms. The Taranga property has 15 varieties planted. In 2011 the family celebrated 170 years of grape growing.

Majella Wines
Majella Wines is a family owned winery based in the famous Coonawarra wine region in South Australia, home to some of Australia’s greatest wines. The winery was completed in late 1998 and Majella’s winemaker Bruce Gregory has made every bottle of Majella ever released.

Thorn-Clarke
With a family history in the Barossa region dating back to the 1850s and estate grown vineyards now totaling over 270 hectares, Thorn-Clarke produces a range of award winning Barossa Valley red and Eden Valley white wines. The winery is one of the largest family-owned estate-based businesses in the Barossa.

TurkeyFlat Vineyards
Turkey Flat wines began in 1847 when Johann Frederick August Fiedler planted Shiraz vines near Bethany Creek. The vines planted in 1847 are some of the oldest vines used for commercial wine production today and believed to be the world’s oldest vines that have been authenticated. The Turkey Flat vineyards and winery are now situated on the historic Section One property in the centre of the Barossa.

Farmer’s Leap
When Scott Longbottom and Cheryl Merrett took the leap to plant vines on their Padthaway land in 1993, they applied the know-how handed down from three generations of farmers. This place is part of their DNA. Much like Scott and Cheryl, the wines are honest and approachable, wines they are proud to put on the table and enjoy with their friends. Shiraz, Cabernet Sauvignon, Chardonnay and Sauvignon Blanc are all produced under the Farmer’s Leap and Random Shot labels.

Henschke
Henschke is a family-owned, 148-year-old Australian winery, located in Keyneton, South Australia in the Eden Valley wine region. Regarded as the best medium-sized red wine producer in Australia, Henschke has gone from strength to strength over the past three decades under the guidance of winemaker Stephen and viticulturist Prue Henschke.

Highbank
Highbank Wines is a classic, small, family winery on a raised section of rich, red, terra rossa soil – the soil that makes the Coonawarra such a prized wine region world wide. Highbank’s premium handcrafted wines have gaining attention from wine enthusiasts and are regularly sighted on the wine lists of Australia’s top restaurants.

Sons of Eden
Sons of Eden has a simple philosophy to produce wines with flavour and personality from vineyards of unique character within the world class Barossa region. Sons of Eden takes its name from the two partners, Winemaker Corey Ryan and Viticulturist Simon Cowham, who both learned and refined their trades in the vineyards and cellars of Eden Valley. The winery specialises in varieties that the Barossa produces to the highest standard. Varieties such as Shiraz, Grenache and Mourvedre from the Barossa Valley and Riesling from the Eden Valley. Open link to learn more about the Valleys of the Barossa.

St Hallett
Strong long-term relationships with focused and passionate growers give St Hallett access to the Barossa’s most prized vineyards with some dating back over 100 years. Over time St Hallett has built up a deep understanding of the rich tapestry of sites and climates in the Barossa and with it an appreciation of both dedicated growers and quality vines.

Hither and Yon
Owned by brothers Richard and Malcolm Leaske and based in McLaren Vale, Hither & Yon crafts a unique range of wines from varying sites within McLaren Vale each year. Richard manages all the vineyards and makes the wines, Malcolm handles production, sales and the historic cellar door

主題大區:阿爾薩斯(Alsace)
今年法國五月美食節主題大區阿爾薩斯位於法國東部,歷史悠久,文
化底蘊深厚。得天獨厚的地理位置讓其糅合法德文化精粹;白葡萄酒
易於入口、清新芳香;菜式則既傳統又創新,包括白酒燉肉鍋
(baeckeoffe)、火焰薄餅(flammekueche)、酸菜(choucroute) 等等。

阿爾薩斯葡萄酒:

阿爾薩斯葡萄酒活潑、純正,獨一無二的味道源自完美的氣候,由多種土壤構成的獨特風土,以及精準的釀酒技術。
坐落孚日山脈(Vosges Mountains)東邊的坡地上,阿爾薩斯葡萄酒產區享受著天然的雨水阻隔。陽光燦爛、炎熱和乾燥的半大陸性氣候,孕育出阿爾薩斯葡萄酒複雜的香氣、輕盈的酸度和豐富的果味。
阿爾薩斯一億五千萬年來的土壤演變,亦為葡萄酒增添韻味。今天,阿爾薩斯產區的葡萄樹大部份紮根於由四至五種不同岩石構成的土壤中,釀出的葡萄酒自然帶著豐富的複雜性。阿爾薩斯產區擁有13種地質結構,橫跨三大區域:孚日山脈坡地土壤變化多端,山腳的土壤則最為複雜,與平原上較少發展的新土壤形成對比。

多樣化的地質結構讓阿爾薩斯的7種主要葡萄品種釀出獨一無二、並以葡萄品種命名(而非酒莊或地區名字)的美酒:

• 阿爾薩斯白皮諾Alsace Pinot Blanc:酒身輕盈,略帶蜜桃和蘋果香氣與花香
• 阿爾薩斯西萬尼Alsace Sylvaner: 清新、輕盈,帶細膩果味
• 阿爾薩斯雷司令Alsace Riesling:乾身、極具優雅,果香和花香含蓄怡人
• 阿爾薩斯麝香葡萄Alsace Muscat:活潑清脆,以濃郁果香及乾澀見稱
• 阿爾薩斯灰皮諾Alsace Pinot Gris:豐厚圓潤,帶乾果、杏樹、蜜糖、蜂蠟及薑餅等的複雜果味
• 阿爾薩斯瓊瑤漿Alsace Gewurztraminer:個性張揚,展現熱帶水果、鮮花、柑橘和香料等的濃郁香氣
• 阿爾薩斯黑皮諾Alsace Pinot Noir:阿爾薩斯的唯一紅酒,清新、輕盈、充滿果香

阿爾薩斯葡萄酒可分為三個法定產區(AOC):

• 阿爾薩斯法定產區(AOC Alsace):創於1962年,產量佔整個大區的
72%,其中九成為白葡萄酒。
• 阿爾薩斯法定產區氣泡酒(AOC Crémant d’Alsace):阿爾薩斯出產
的尊貴氣泡酒。Crémant d’Alsace清新優雅,採用傳統二次發酵法,以白皮諾(Pinot Blanc)為基底,亦會加入灰皮諾(Pinot Gris)、黑皮諾( Pinot Noir)、雷司令(Riesling)或霞多麗(Chardonnay)。Crémants d’Alsace是法國繼香檳後最受歡迎、高品質的氣泡酒。
• 阿爾薩斯特級葡萄園(AOC Alsace Grands Crus):51種阿爾薩斯
特級葡萄園的葡萄酒,皆由特定區域、以人手精心挑選的葡萄釀製而成。全年平均產量為500,000枝,僅佔總產量的4%,極其罕有。除了極少數例外,只有4個葡萄品種的葡萄酒能獲得此美譽──Riesling、Gewurztraminer、Pinot Gris 及Muscat 。

阿爾薩斯美食:

阿爾薩斯不但以美食著名,阿爾薩斯人對食的要求也為人津津樂道。今年共有26間阿爾薩斯餐廳摘下2016米芝蓮星級榮譽,是法國其中一個最多米芝蓮星級餐廳的地區。
想起阿爾薩斯的美食,當然會聯想到於此地誕生的鵝肝和蝴蝶脆餅pretzel。不過阿爾薩斯的傳統菜式包羅萬有,鹹甜兼備:洋蔥撻、白酒燉肉鍋Baeckeoffe、火焰薄餅Flammekueche、酸菜choucroute、奶油圓蛋糕Kougelhopf等等。露荀、各式各樣的香料如西洋山葵raifort、或聖誕餅乾bredele等亦充滿特色。
啤酒也是區內另一重要產物,由中世紀開始便於阿爾薩斯的村莊內製作,傳統源遠流長。

阿爾薩斯旅遊:

阿爾薩斯坐落於萊茵河(Rhine River)及孚日山(Vosges mountains)中間,與德國和瑞士接壤,當中有三個擁有不同氣質的主要城市:
• 斯特拉斯堡(Strasbourg):歐洲之都和阿爾
薩斯首府,其聖誕市集和歷史遺產世界聞名,
如大島(la Grande Ile)被列為聯合國教科文組
織世界遺產。
• 米盧斯(Mulhouse):技術博物館之都,被譽
為法國的曼徹斯特。
• 科爾馬(Colmar):阿爾薩斯葡萄酒之都,城
鎮古老迷人,擁有多項文化及建築遺產:菩提
樹下博物館(Unterlinden Museum)、小威尼
斯(Petite Venise)。
除了人文歷史悠久,阿爾薩斯地貌景觀多樣:湖泊、河流、森林、山脈和瀑布,如法國最受遊客歡迎的歐根尼斯城堡(Château du Haut-Koenigsbourg)、The Crest Road、聖山——多農山(Donon Mountain)、及世人傳頌的阿爾薩斯酒鄉之路(The Alsace Wine Route)等。
